Smoorsnoek

1 Tbsp (15 ml) vegetable oil

2 medium onions, finely sliced

1 clove garlic, crushed

¼ tsp (1.25 ml) dried chilli flakes

500 g sweet potatoes, peeled and diced into 1 cm cubes

2 ripe tomatoes, seeded and diced

250 g smoked snoek, bones and skin removed and shredded

Juice of 1 small lemon

Handful of fresh coriander, finely chopped

Salt and pepper

Heat the oil and sauté the onions until softened and glossy. Add the garlic and chilli and fry for another minute.

Add the sweet potatoes, cover and cook over low heat for about 15 minutes, or until the potatoes are tender. Add

the tomatoes and cook for a further 5 minutes. Now add the snoek and heat through for a few minutes. Gently stir

in the lemon juice and coriander. Season to taste.

Serve with some extra slices of lemon.
